July brought us a corn fritters challenge at KitchInspirations! Fresh or canned or frozen corn in a batter. That's pretty much the rules.
I have completely forgotten that Thai people do corn fritters too, Tod Mun Kaopoad. And that is what I ended up making.

Off the wagon

My coworker returned from her Australia trip with a box of individually wrapped Tim Tams.
For those who haven't experienced Tim Tam, Australia's favorite chocolate biscuit, let me explain to you what it is.
Tim Tam = Crack.
You heard me.
What I called "crack" here, Arnott's, the maker of Tim Tam, explains it this way:
The chocolate used to make Tim Tam biscuits has been specially developed by Arnott’s to give a slightly caramel taste. The cream flavour is a delicate mixture of vanilla, butter and chocolate that complements the biscuit base and the chocolate. It’s this unique cream which sets Tim Tam apart from any other chocolate biscuit.
Pure. Unadulterated. Crack.
I was addicted to it when I was a kid at international camp in Australia. I had since forgotten about it until I found them again at Cost Plus World Market about a year ago. I did buy a few to reminisce the past. But I found myself craving for it days after I finished.
Fighting the relapse was hard. But I got through it. I haven't gone to Cost Plus since.
And then yesterday, a giant box of Tim Tam showed up by our printer with a sign, "A gift to you from Australia. Enjoy!"
Frell me dead.
Predictably, I had two that day.
I managed not to eat one today because I substituted a still warm from the bakery, dark chocolate stuffed croissant instead. Not too much of a better choice, but hey, I'm trying!
